Mmmm…cookies for breakfast?
The GOOD thing about being an adult – I can eat WHAT I want, WHEN I want. No “mom” telling me I can’t have something before dinner that will ruin my appetite. No withholding desserts after dinner because I didn’t clean my room. I’m a grown woman – yippee!
The BAD thing about being an adult – I’m NOW MY MOM. I’m saying all of those things and more to my own children and know better about my food choices whether they be good or bad so I always think twice about what I’m eating even if I don’t necessarily decide to take the healthier road.
Wouldn’t it be fun if you could have a healthy quick breakfast that felt like you were cheating the system?! Like you won the breakfast lottery because of a loophole?
I’ve talked about my love for my Lemon Ginger tonics in the mornings and now I’m going to touch on one of my FAVORITE breakfast smoothie recipes: Peanut Butter Oatmeal Chocolate Chip. There are other variations to the recipe that I will include below that will make it taste like a slightly different indulgence each time. Don’t worry, Mama Approves 🙂
PB Oatmeal Chocolate Chip Recipe:
- 1 cup of quick oats
- 1 large handful of baby spinach
- 1 banana
- 1 scoop of protein powder (vanilla or chocolate flavored)
- 2 heaping tbsp almond butter (I didn’t have any today so I used regular peanut butter)
- 1 heaping tbsp of finely ground coffee (your choice)
- 2 cups Almond Milk
- 1 cup of ice to chill
Add spinach, quick oats and almond milk until well blended. Add protein powder, ground coffee, banana and almond butter (or peanut butter) and blend well. Add in ice and blend to chill. Pour and Enjoy!
(makes about 2 – 16 oz servings)
